Sensometric Evaluation of Minimally Processed Snapping Shrimp (Alpheus sp.) Cold Cuts in Aquaculture
Abstract
Sensory research in aquaculture has been developed in different ways depending on the commercial interests of the species implicated. The application of aquaculture research has shown tremendous impact for the continued growth of the industry needs and to complement the findings and possibilities offered by sensometric. The main purpose of the study is to produce snapping shrimp processed into cold cuts (luncheon meat) and utilized to evaluate the sensory acceptability of snapping shrimp processed cold cuts in terms of appearance, aroma, mouthfeel, texture, taste, and overall acceptability. A mixed-methods research design was used in the study. A quasi-experimental design was used to test the preliminary characteristics and 9-point hedonic scale for consumer preferences. Results have shown that the proposed selling price of T0 is P 16.8 compared to T4, which is P 19.78. The shelf-life and other physical characteristics, including aroma and appearance for both at room temperature and in the refrigerator, showed no changes from day 1 to day 7. The luncheon meat also possessed remarkable physical characteristics while being stored at a high freezing point. There is a significant difference in terms of appearance, aroma, mouthfeel, texture, taste, and overall acceptability in five (5) treatments. This further implied that all treatments have different levels of acceptability in terms of the four (4) sensory attributes. From the 5 treatments used, T2 (25% pork and 75% snapping shrimp) was the most accepted and considered preferable by the respondents compared to other treatments. The processed cold cuts (luncheon meat) have a potential for adoption either from the identified community or from aquaculture entrepreneurs.
Introduction
In the past decades, aquaculture has been one of the most promising production industries. It is the controlled process of cultivating aquatic organisms that is being used, particularly for human consumption. It’s a similar concept to agriculture, but with fish instead of plants or livestock. Aquaculture is also referred to as fish farming. The seafood that you find at your local grocery store is likely labeled as farmed fish. Aquaculture can happen all over the world, either in coastal ocean waters, freshwater ponds and rivers, or even on land in tanks. Several studies, like the study of Yongqiang Zhao et al. Applied research efforts in aquaculture should recognize the significance of consumers’ behavior and preferences with the aim of making this industry economically sustainable. Until now, sensory research in aquaculture has been developed in different ways depending on the commercial interests of the species implicated. The sensory analyses generally used in aquaculture were identified in four main application research areas: nutrition and feeding, production aspects, quality products, and marketing topics (Calanche et al., 2019). The existence of snapping shrimp (Alpheus sp.) is very timely, as it's one of the most promising marine products that have greater potential for aquaculture production. Knowing its biology and habitat classification, with the addition of several trials of experiment conducted, this species has a high opportunity for mass production. Snapping shrimp is one of the fishery resources that are abundant in the town of Calape, Bohol. They live particularly in coastal areas with a wide intertidal zone, mangroves, and rich mud banks. This species is locally known as “takla” because of its very unique sounds and is considered a seafood delicacy in the municipality. Shrimp that is among the worlds fastest and that produces the loudest sounds underwater. They use the sound to communicate with one another and to defend their territory (Baobao et al., 2015).
The abundance of snapping shrimp in the locality was one of the factors that the researchers considered in developing processed cold cuts, which are generally termed luncheon meat. Luncheon meat is a type of cooked meat that is often sold in tins. It is a mixture of meat and other ingredients. It is convenient and shelf-stable. One of the biggest benefits of luncheon meat is that it is convenient and easy to prepare when running short on time or with limited ingredients available. It is also shelf-stable, which makes it simpler to stock up on compared to perishable protein foods like chicken or beef. In addition to these, luncheon meat has healthy benefits; it provides small amounts of vitamin C, magnesium, folate, and calcium. You can eat uncooked luncheon meat because it is already steamed; it can be eaten straight from the can and requires minimal preparation prior to eating. It is also highly versatile and can be added to a wide variety of recipes. One of the first things you need to know about canned meats or luncheon meat is that they are almost always already cooked (Miranda, 2020). Generations of Filipinos love eating processed cold cuts of luncheon meat regularly, typically sliced or diced, then stir-fried and served on a bed of steamed rice, sometimes with a fried egg. It is now devoured in 44 countries worldwide, but it first came to life in 1937 in the small town of Austin, Minnesota. Fried, baked, boiled, or braised, the porkbased luncheon meat was first a hit in the US during the great depression and then in Asia after World War II. It is noticeable that people are very busy and are always in a hurry nowadays. The number of groceries and manufacturers of canned goods like luncheon meat is increasing because people have less time to cook and prepare their own food. Canned goods are the best choice for an emergency food supply. Canned goods luncheon meat can provide protein of high nutritional value for what is considered a highly nutritious food.

The most amazing finding is that taste sensitivity varies from person to person. It comes from a chain reaction that starts with sensitive proteins on the tongue, races through taste buds, enters the nerves, and ends with the brain. Almost everyone lives in a unique taste world, which directly relates to the interaction food has with the consumer at a given moment in time. The factors that affect food acceptability are different for the foods they love and hate. Overall acceptability includes customer characteristics, sensory characteristics of food, and the feel-good factor (Maina, 2018).
Processing snapping shrimp meat is a significant sector of the global economy, contributing to food security and nutrition as well as livelihoods. Processed food enables the supply of safe, affordable, and nutritious foods. The processed food sector accounts for a significant share of income generation and employment, is essential to maintaining a steady global supply of safe, affordable, and nutritious foods, and is thus key to supporting food security and nutrition. Processed food reduces the number of harmful bacteria in food that can cause diseases. It boosts the shelf life of food products and provides employment to a large population. Processed foods have been preserved by steaming, salting, or adding chemical preservatives. It refers to any food that is changed from its natural state. This may include adding preservatives, flavors, nutrients, and other food additives. It has a place in healthy diets. The key to healthy eating is to educate yourself on what to look for and talk with your health care professional or nutrition expert to discuss a food plan that works best for you (Harguth, 2022).
In this study, it only focused on the application of this species to aquaculture and the sensometric characteristics of a new product of processed cold cuts of luncheon meat; however, it showed some significant application not only to the contribution of the body of knowledge but also to the applicability for research utilization and commercialization of the product. The results of the patent search showed tremendous impact on the potential of commercialization for the following reasons: first, PH22019000243Y1 discloses the process of producing fresh water shrimp meat dumplings; second, RU2337589C1 specifies the method of manufacturing special-purpose canned food soup with shrimps and third, the RU 02332083 method of production of preserved food shrimps with vegetables and potherbs is invented. The prior art mentioned above discloses the methods and composition of producing freshwater shrimp and dumplings. Although they are using the same commodity, which is shrimp, there are features and meat quality compositions that are different from freshwater and snapping shrimp. The product is dumplings, but the present invention relates to snapping shrimp luncheon meat in a tin aluminum can. Another prior art is the production of canned shrimp soup. In this invention, there is no disclosure as to what type of shrimp is used or the amount of soup that is added. The present invention is different because the processed snapping shrimp has no liquid in the canned product. The last prior art discloses the ingredients used in the preparation of the preserved food shrimps with vegetables and potherbs. The present invention is different from the last prior art since no liquid is involved in the canned processed food. No mention was also made of the kind of shrimp used.
Generally, this study aims to determine the potential of snapping shrimp for aquaculture and the sensometric value of processed cold cuts (luncheon meat) of snapping shrimps. Specifically, this study focuses on the following indices: 1) qualitative description of the snapping shrimp in making processed cold cuts (luncheon meat); 2) preliminary assessment; 3) sensometric components of the snapping shrimp processed cold cuts (luncheon meat) in terms of appearance, aroma, taste, texture, and overall acceptability in the five treatments identified: T0- (100% pork luncheon meat), T1 (50% pork + 50% snapping shrimp), T2 (25% pork + 75% snapping shrimp), T3 (75% pork + 25% snapping shrimp), T4 (100% snapping shrimp); and 3) significant differences in the acceptability.

However, the video was misinterpreted and Sandmann later sued media outlets for $800 million using the footage without telling the full story.
CNN, NBC Universal, and the Washington Post settled with Sandmann in 2020, according to multiple media outlets. His classmates also sued but failed.
In another lawsuit, Freberg writes that A-list actor Johnny Depp was forced to resign from Warner Bros after he lost a civil action against The Sun.
Journalists abide by a Code of Conduct that was adopted in 1926 — before that newspapers ran amuck of journalistic standards. They were weaponized by business owners and politicians to influence the public. However, some of that information would not meet standards for journalists today. Colonial-era headlines are still some of the most creative writing of the last 200 years due to their poignant nature.
If you were to join the New York Times today, in addition to agreeing to the Social Media Code of Conduct that its writers are expected to follow, you would be required on social media to avoid harassment, during business and personal hours, be “mindful” of taking sides” in topics that could undercut the newspaper's reputation, avoid joining private groups, do not accept gifts from sources, and more.
Among those who do follow strong ethical behavior on social media, I think organizations like the Associated Press, Reuters, NPR, and BBC are trustworthy groups. On the flip side, I think that Cable TV networks, which must play to their audience, tend to parade analysts and commentators as journalists when they are opinion columnists. Some of these are flagship organizations (Fox News, MSNBC, NBC, CBS) whose coverage trickles down to local TV markets and media outlets that are not influenced by this type of coverage, such as WPRI-TV or WJAR-TV. Journalists who work in local media — not including citizen journalists and activist journalists — are newsgathering organizations whose organic stories guide their audience's interests. For example, Washington Bridge's accountability reporting surrounding RIDOT’s handling of the bridge crisis has put many politicians and leaders under scrutiny.
In the case of Fox News and CNN, you see the difference in their coverage of politics — one is more liberal and the other is more conservative — both sometimes completely ignoring stories and facts.
With this in mind, some takeaways are that journalists should continue to be observers who lay out their findings and let the readers decide on the merits of a story. Often this process is muddled by social media users who interject information into the media stream, jump to conclusions, or make statements without having all the facts. Sometimes this is to “beat” the media and often it leads to a change in the narrative that must be corrected later. Journalists are held accountable — they can be fired or sued — for improper reporting, while many self-proclaimed journalists, or activists, spread misinformation without consequences.
To adhere to my conduct online, I have chosen to keep my personal social media accounts closed and refrain from making polarizing statements online. My social media feed contains animal pictures, family updates, and limited chat about community happenings. Simplifying social media is a way to keep your sanity and your job.
I feel strongly that people should be able to share their thoughts regardless but understand that not everyone will agree. This requires restraint in your response. Social media is a place where reckless posts can easily be misinterpreted and feelings hurt. Be patient and listen to people.

Do not allow my personal feelings to cloud my judgment. Listen to people
Use clean and fair language
Report threats and cyberbullying to administrators
If I see surprising news, but can’t verify it, don’t post it

Animal Crossing Through the Lens of Transmedia
SOURCES & SIGNIFICANCE, BLOG POST #3
Transmedia storytelling represents the systematic dispersal of a fiction’s key elements across multiple media channels to create a unified and coordinated experience (Jenkins, 2007). A key element of most fiction is characters, as such characters are generally considered as a transmedia phenomena because they move across media borders (Thon, 2019) and can be the main driving force behind some transmedia franchises branching out into other media forms or creating sequels. Character driven franchises can be very popular, examples of this include the Marvel Cinematic Universe, Marvel comics, games, figures, etc. and the films and games, etc. based in Tolkien’s Middle Earth.
Animal Crossing, by Nintendo, is another example of a character driven transmedia franchise; each installment is an additional role-play using existing and new characters in a fresh, but functionally familiar, setting. Animal Crossing characters, also known as villagers, are “collectibles that connote status; players use the characters in Animal Crossing: New Horizons to trade so that they can decorate their virtual islands with them” (Blom, 2023). The implications of which will be explored later. Animal Crossing currently stands at 23 publications, all featuring a repeating cast of characters, and while only 12 of which received official publication outside of Japan (Fandom, 2023), it has a rich and diverse international community. Its content spans games for console and mobile as well as manga, anime and even a calculator app! It has had successful international collaborations with Puma, Build-a-Bear (Game8, 2022), and the most recently announced Lego (fig.1), (Lego, 2023).

Its integration of collectible, interactive NFC technology through character cards and figures (amiibo) was a genius take on classic card collection trading games also popular in Japan (and internationally), such as Pokemon and Yu-Gi-Oh. Which turned their virtual collectability of Animal Crossing characters into something physical and unbound to the villager limit in-game.
Nintendo also creates its own merchandise (Nintendo, 2023) to broaden the brand and has used Animal Crossing skins featuring their characters and art style for the Nintendo Switch, and other consoles, to promote sales for new and existing customers who want to add to their collection of themed consoles. This is a fascinating concept which I believe encourages consumerism and feeds the capitalistic component of transmedia through merchandise (AFFUSO, SANTO, 2018).
While not unique to Animal Crossing, the popularity and exclusivity of some of Nintendo's merchandise and collectible technology has created a commercial sub-culture of collector markets, unofficial copies of NFC codes, and scalping (purchasing with the intention of reselling for a profit). This has given rise to complaints about the scarcity of items created by Nintendo that may encourage unaffordable resell prices and piracy of functional game items that add to players' experiences (Tassi, 2015; Amiibo Doctor, 2021). Nintendo is taking actions to reduce scalping in the future specifically for their consoles (GoNintendo, 2023), which could be in the company's best financial interests, as well as limiting the quantity of amiibo purchasable by end consumers. However, it can also be argued that a certain degree of merchandise scarcity adds value and hype around the acquisition of rarer products (Belk, R. 1982).
The most famous of Animal Crossing's consumer-created markets is Nookazon (a play on words of the shop-keeping characters unique to the franchise and the mega online store Amazon.). It is a self-contained market which facilitates private trading of items and villagers for in-game currency within the franchise's most recent release Animal Crossing: New Horizons (AC:NH). The controversy surrounding Nookazon is a good example of how the interactive components of transmedia can alter the vibes of a franchise. Nintendo intentionally added the element of trade to AC:NH to promote player interaction, but scammers, using Nookazon as a platform, could over-charge for items others wanted, or not finish the trade at all (Wood, 2020). It could be said that the darkest moment of AC:NH digital black market trading was the trafficking of villager characters for obscene amounts of in-game currency (Stone, 2020). This stopped when Nintendo introduced importing villagers through amiibo, but instead grew the physical black markets previously discussed.
In contrast to the aforementioned negative aspects, there have also been wonderful fan contributions to the Animal Crossing universe that, although non-canonical, add a story component to the characters that is a little lacking within the franchise, such as the 3D animated short stories by Densle (2023). The in-game interactivity Animal Crossing promotes in the community through user-created designs, island tours and the massive subculture of island design ideas on YouTube and social media, is a beautiful example of convergence culture (Jenkins, 2006) as consumers expand and take ownership of masses of creative content that enrich the Animal Crossing world.
This study shows that it is key to consider the more negative aspects that can come about when expanding a franchise through further media. I think the balance of scarcity to build hype requires delicate handling as it can create a black market where people who may feel they are missing out on key experiences may turn to even if they generally do not support piracy. If handled carefully, the benefits of consumer interaction through this hype are substantial as the consumers can begin to self-promote the franchise and grow the community in wholesome ways.
